Cup 'O Noodles - 3 ways

Raise your hand if you loved cup 'o soup as a kid?


Maybe you still do but know you need a something that's more than just a "tad" bit better for you. Enter this Homemade Cup 'O Noodles. These grab 'n go jars are packed with good for you vegetables, protein, rice noodles, and most importantly...flavor.


Lots and lots of flavor.


We've got three versions for you to try but this recipe is truly a template waiting for your creative touch.



Each one of the ingredients can be switched out with whatever your heart desires (well, mostly). If you decide to get creative just make sure to follow a few simple rules.


1. flavor goes in first

2. add your crunchy vegetables

3. top with softer vegetables and protein

4. blanched noodles go on top



Get out some mason jars and start filling them up. A comforting cup 'o noodles is just a couple cups of hot water away.



Cup 'O Noodles


  • 1/2 block of gluten-free ramen shiratake noodles

  • 1/2 vegetable bouillon

  • 2 cups cabbage or hardy greens

  • 1/4 - 1/2 cup broccoli

  • 1 radish, thinly sliced

  • 2  mushrooms, thinly sliced

  • 2 TB red onion, chopped or sliced thin

  • 1/4 cup chickpeas, black or kidney beans

Spicy Kimchi Spice Mixture

  • 2 TB kimchi, minced

  • 2 TB kimchi juice

  • 1 tsp chili garlic sauce

  • Flavor packet: cilantro, sea lettuce, chopped cashews

Miso Ginger Spice Mixture

  • 1 TB miso

  • 1 TB coconut amino's

  • 1 tsp pickled ginger, minced

  • 1 tsp sesame oil

  • Flavor packet: cilantro or Thai basil, dulse flakes, sesame seeds

Sauerkraut Spice Mixture

  • 3 TB sauerkraut

  • Flavor packet: cilantro,  cashews and/or pea shoots


  1. Place the ramen noodles into a pot of boiling water for 1 minute. Remove from put and run under cold water to stop the cooking. Set aside. This step is not needed if using shiratake noodles.

  2. Place the spice mixture of choice into the bottom of a 1 1/2 pint or quart sized mason jar. Layer the vegetables on top of the spice mixture.

  3. Place the beans and then the ramen or shiratake noodles on top of the vegetables.

  4. Cut squares of parchment paper, plastic wrap or foil and place the flavor packet ingredients into each square. Fold the square up and set it on top of the noodles in your mason jar.

  5. Screw the lid onto your jars and place them in the refrigerator until you're ready to enjoy them.

  6. To prepare, fill each mason jar with enough boiling water to cover the noodles. Let sit for 2 minutes. Pour the soup into a large bowl and stir in the flavor packet. Enjoy.

*The main ingredients can be increased as desired to make as many Cup 'O Noodles you'd like. These make for great grab'n go lunches or dinners.
