I was looking through some of Tab and my old posts and realized that being at Tab's house made it easier to write blog posts. Why? Life with other people is full of adventure and activity that = stories.
This time of year is a time when we purposely fill our lives with activity and people. Why (yes...another why)? Because it's Christmas. I told a friend today that we should take the spirit of Christmas and carry it with us throughout the year. Why do we pack parties, social gatherings, gift giving etc. all into one month? God blesses us with 365 days in every year and I've decided that parties, social activities and gift giving should be part of every.single.day.
Because Jesus came to earth and blessed us with the gift of life.
Because friends and family are treasures that shouldn't be neglected.
Because everyone, even on normal days and for no apparent reason, deserves a gift.
So....before it's time for New Years resolutions (I rarely make them anyway), I'm resolving to make relationships with others a TOP priority from today forward. Think of how much a simple card in the mail (is mail that's not junk mail even a thing anymore), a text telling someone how much they mean to you, a phone call (yes...a real.live.dial the phone.and.talk.call), a morning walk or afternoon cup of tea would and could mean to the people you know well and barely know at all.
Christmas at our house has always included a mix of family, friends and sometimes the occasional stranger that becomes a friend over Christmas dinner. Since relationships are the topic, how about the food relationships at the Christmas table?
This Warm Black Rice and Pomegranate salad is a bowl full of food friends, friends all mixed into a nutrient rich and tasty family. It's a combo of black rice, baby kale and tangy pomegranate seeds that's dressed with a fresh pepper and allspice vinaigrette. This side (or meal if you've got leftovers) is comforting, fresh, bright, tangy and crunchy. Everything your taste buds want. Go make a spot on your Christmas table for this Warm Black Rice & Pomegranate Salad, your friends and family will thank you for it.
Warm Black Rice and Pomegranate Salad
1 cup black rice
1 3/4 cups water
1/2 a cinnamon stick
1/2 tsp salt
2 bit handfuls of baby kale
1 large pomegranate, seeds removed
1/2 cup pine nuts, toasted
1/4 cup sherry vinegar
1/4 cup extra-virgin olive oil
2 large cloves garlic, minced
1/2 tsp fresh ground black pepper
1/2 tsp allspice
1/4 tsp salt
Place the rice, water, cinnamon stick and salt into a saucepan and bring to a boil. Cover and reduce heat to low and simmer for 30 minutes. Remove from heat and let stand, covered, for 10 minutes.
While the rice cooks, combine the vinegar, olive oil, garlic, pepper, allspice and salt in a lidded jar. Shake to combine.
When the rice has finished sitting, place it in a serving bowl and immediately pour the dressing over the warm rice. Add the kale, pomegranate seeds and pine nuts and toss everything together.
Serve warm or at room temperature.
